I made this today as a part of our food for the week, and it’s yummy!
Mix together a tablespoon of soya sauce, the juice of a lime and two tablespoons of honey or agave syrup:
Chop up two cms of ginger, a handful of shallots & 3 garlic cloves. Get a wok on the hob at a high heat with a splash of sunflower oil. When the oil’s hot, add the ginger, shallots & garlic in and leave until browned. Then using a sieving spoon, take them out of the wok so that you are leaving the flavoured oil in the wok and place on some kitchen towel to soak up the excess oil:
Using the flavoured oil in the wok, add in your veg & cook for a couple of minutes. You can choose any veg you like, just make sure it’s 6-7 handfuls of it. To make this stir fry I use what came in my veg box: chard, mushrooms, cauliflower and spinach. Then add the soya sauce, lime juice & honey/agave mixture & stir fry until the vegetables just soften:
Throw the ginger, garlic & shallots on top. Cook some noodles (I use udon) and mix in. Add more lime juice, soya sauce or honey/agave to taste. Yummy!
