I made a batch of this today as food for the week. It’s quick, easy & yummy!

Fry some onion & celery in a lidded pan until soft. Add 2 chopped cloves of garlic, some ginger & chilli powder. Leave to soften.

Add your red lentils, cumin & coriander with a bit more oil. Leave to toast for a minute.

Add enough water to slightly cover the lentils and leave to simmer for 15 minutes.

Add chopped chard, broccoli, courgettes & some chopped tomatoes. Mix in and leave to simmer for another ten minutes.

Done! Enjoy.
