Place some vegetable stock cubes in hot water in a pot with half a chilli, 4cm of ginger finely grated, 1 cinnamon stick and the grating of lime zest. Simmer for 20 mins.
Cook the rice noodles and toss with a bit of oil.
Squeeze juice into the stock from one of the limes, add soy sauce.
Add your noodles, 2 handfuls of chopped pak choi and 2 handfuls of chopped mushrooms.
